Chicken and Pomelo Salad

It may only be the start of Spring but it sure feel like Summer lately. I’m very happy that we barely had a Winter and it looks like we may just skip Spring all together and jump straight to Summer. Bring on the warm weather! Warmer weather means refreshing, vibrant and delicious salads to enjoy, like this pomelo and chicken salad.

During  Winter I may have way too many pomelos thanks to the bountiful pomelos from my parents’ trees. I really love the addition of pomelo in this popular Vietnamese chicken salad. The pomelos really add another dimension to this refreshing salad. There is an amazing burst of juicy pomelos with every bite.

Gỏi Bưởi Gà – Vietnamese Pomelo and Chicken Salad

Ingredients

1 pomelo
2 cups poached chicken (shred into pieces)
2 cups finely sliced cabbage
1 carrot, peeled and thinly sliced matchsticks
1/2 small onion (red or brown)
1 cup herbs (Vietnamese mint, mint and coriander)
3 tablespoons roasted peanuts, roughly chopped
3 tablespoons fried shallots
1 cup fish sauce dipping sauce

Method
Peel the pomelo and remove the flesh from each of the segments. Break the flesh into bite size pieces and place in a large bowl. Add the cooked chicken, pomelo, grated carrot, cabbage, onion, herbs and fish sauce dressing and gently toss.

Transfer to a serving platter and sprinkle with peanuts and fried shallots.
