The Cookbook Challenge Week 12: Fried Rice In Omelette

Theme: Eggs
Our family loves eggs. Eggs provide a good source of protein for the girls since they don’t particularly like meat. For us it makes such excellent nutritious meals when the pantry and fridge is bare. I’m busy cleaning the house for Lunar New Year so for this week’s challenge I have picked a very simple recipe of fried rice in omelette. The recipe is for crab fried rice but I substitute prawns instead. This fried rice is Thai influenced so it has a hint of spiciness and sourness. Wrapping the fried rice in an omelette is a mysterious way of presenting fried rice.

Fried rice in omelette
Adapted from The Australian Women’s Weekly – Beginners Thai
Ingredients
1/4 cup peanut oil
4 green onions, chopped finely
2 fresh small red thai chillies, chopped finely
1 tablespoon rd curry paste (I used tumeric)
2 cups cooked jasmine rice
250g fresh crab meat (I used prawns)
2 tablespoons lime juice
2 tablespoons fish sauce
8 eggs
2 tablespoons water
1 lime, cut into wedges
Method
1. Heat 1 tablespoon of the oil in wok and sauteed the prawns. Once cooked remove from wok.
2. Add 1 tablespoon of oil to work; stir-fry onion and chopped chilli until onion softens. Add curry paste; stir-fry until mixture is fragrant.
3. Add rice; stir-fry until heated through. Remove from heat; place in large bowl. Add crab meat (or prawns), juice and sauce; toss to combine.
4. Whisk eggs with the water in medium bowl. Heat about a quarter of the remaining oil in same cleaned wok; pour a quarter of the egg mixture into wok. Cook, tilting pan, over low heat until almost set. Spoon a quarter of the fried rice into centre of the omelette; using spatula, fold four sides of omelette over the enclose filling.

5. Press omelette firmly with spatula; turn carefully to brown other side. Remove omelette from wok; cover to keep warm. Repeat process with remaining oil, egg mixture and fried rice. Place omelettes on serving plate; serve with lime.

This looks so delicate and light, not like my heavy looking omelettes. Anything with prawns and lime is sure to be a winner.
