Vietnamese Sweet Corn Pudding with Coconut Milk (Chè Bắp)

When it comes to corn, there is nothing I enjoy more than to dig my teeth into juicy corn on the cob with melted butter. Ok a little messy but all so good. When corn is in season I always have it stocked in my fridge as it serve as a great snack. I rarely cook with corn and when I do it’s usually chicken corn soup for the girls or a Vietnamese corn pudding called “chè bắp”. Some cook chè bắp with tapioca pearls and coconut milk together, but I grew up with chè bắp that is thick with glutenous rice and coconut milk is added separately on top.
Corn pudding (Chè bắp)
Serves 4-6
3 ears corns on the cob
4 cups water
1/4 cup glutinous rice, rinsed and drained
5 tablespoons sugar
3 tablespoon corn starch
1/2 teaspoon salt
3 pandan leaves or 1/2 teaspoon vanilla extract
Coconut sauce
1 cup coconut milk
2 pinches of salt
1/2 tablespoon sugar
Method
1. Cut one end of the corn. Stand the corn on the cut end and use a sharp knife to shave the corn until reaches the core.

2. Add water and rice in a saucepan and boil over medium heat. Stir occasionally to prevent rice from sticking together. Boil until the rice is nearly cooked.
3. Add shaved corn and sugar to the saucepan. Continuously stirring to dissolve the sugar and bring to the boil. Dissolved the corn starch with a few tablespoons of water. Stir in the corn starch mixture to the corn and add vanilla extract, mixing well. Bring to the boil to thicken the sauce and then remove from the heat.
4. To make the coconut sauce, combine coconut milk, sugar and sugar in a small saucepan. Bring to a boil over low heat.
5. To serve, laddle the corn pudding into small bowls and top with coconut sauce.

this is a great way to enjoy corn…sticky gooey and delicious!

I totally agree with you. The more coconut milk the better!
