Strawbery Tiramisu

I’m debuting The Cookbook Challenge with a Strawbery Tiramisu. When Dave found out that the theme for The Cookbook Challenge is berry, he requested for a blueberry tiramisu that I make last week as he didn’t get to taste much of it. I went with a strawberry tiramisu instead as this was what I wanted to make for the christmas lunch but didn’t have time. This cake is so easy to make and it tatses so good with that generous shavings of white chocolate. My cream was a bit runny but still tasted great. I didn’t beat the cream thick enough as I didn’t have time due to screaming kids.

Strawberry tiramisu

Adapted from Coles Christmas Magazine

300g strawberries, hulled (fresh or frozen)
3/4 cups water
1/2 lemon juice
3 tablespoons of white sugar.

2 eggs
1/3 cup caster sugar
500g fresh strawberries (cut in halves)
250g mascarpone cheese
2/3 cup thickend cream
200g sponge finger biscuits
white chocolate

Method

Cut 300g of strawberries in chunks and add to saucepan. Add 3 tablespoons of white sugar, water and lemon juice and cook over medium heat. Stir when the mixture comes to a boil and mashing down the strawberries. Continue to cook for another 5 minutes. Remove from heat and put the strawberries through the strainer and squeezing with a wooden spoon.

Beat eggs and sugar with electric mixer until thick and creamy.

In a separate bowl, beat mascapone and cream with an electric mixer until thick. Fold egg mixture into mascarpone mixture.

Line the base of a 24cm springform pan with baking paper.

Dip biscuits, one at a time, into the strawberry syrup and use to line base of pan (cut to fit if necessary). Layer some strawberries halves on top of biscuits. Then top with half the mascapone mixture. Repeat. Cover, refridgerate overnight.

Remove from springform pan and carefully transfer to serving plate, decorate with strawberries halves. Using a vegetable peeler, shave some white chocolate curls over the top.

    Hi, love your site and the beautiful photos.

    I’m going to come often to check out your asian cooking to get inspiration on what to cook for my family of 4 too. :) I have 2 daughters myself who are pretty fussy eaters, and we always stick to the same dishes because they are not very adventurous in trying out new food. Daily, it’s rice, stir fried vege, a fried fish/chicken a soup or a stew.

    *Yawn*

    Your girls are more adventurous?

    Now this sounds perfect! Love the sound if this dessert – all my favourite things with extra cream! Looks so pretty too and your cream doesn’t look too runny. All the better to be soaked up I say :)
