Recipe: Cold Prawn Salad
How appropriate that this week’s Cookbook Challenge’s theme is cool. With the temperatures in the 40’s I was very tempted to make a cold dessert of some sort for this week’s challenge, but I since I have over indulged a bit too much lately and was determined to stay away from making something sweet. I thought a refreshing cold salad would suit the cool theme. I settled on making this Thai noodle and prawn salad cause my girls loves noodles and I have not make anything from this particular cookbook that I bought many years ago.
I have not had bean thread noodle as a noodle dish before and this was a such a refreshing dish. Just don’t soak the noodles too long as they become too soft.
Cold prawn salad with bean thread noodles
Adapted from The Australian Women’s Weekly Beginners Thai
Ingredients
200g bean thread noodles
1 clove garlic, crushed
2 tablespoons fish sauce
1 tablespoon lime juice
2 teaspoons sugar
2 teaspoons peanut oil
1/4 cup coarsely chopped fresh coriander
2 fresh small red thai chilli, seeded, sliced thinly
1kg large cooked king prawns, peeled, deveined
1/4 cup coarsely chopped roasted unsalted peanuts
2 spring onions, sliced thinly
Method
1. Place noodles in large heatproof bowl; cover with boiling water. Stand until just tender; drain. Using kitchen scissors, cut noodles into random lengths.
2. Whisk garlic, sauce, sugar, lime juice and oil in small bowl to combine.
3. Add noodles to a large bow. Pour the sauce, peanuts, spring onion, coriander, chilli and prawns over the noodles and toss gently to combine.

This is so simple yet looks so delicious. I love those noodles.

@ Rista: Thank you. I thought it tasted better after the noodles were chilled in the fridge.

I love salads with lime juice/fish sauce dressings; they’re so refreshing! This looks so easy to make, too

There is a problem with the ingredient list.
1) It says to add the … nuts, onion, (but these are not listed. (What kind of nots/onion and quantity please)
and in the list of ingredients it says ‘… 1 large cooked king prawns”’ – 1 what lb kilo ???
Also how many does this serve (as an appetizer)?
