Fried Tofu With Lemon Grass

When I comes to asian marinate, I love a marinate with lemon grass. Why not when you have a constantly supply of home grown lemon grass in the freezer. I’m not so lucky this year as my parent’s lemon grass plants was neglected and new plants had to be planted. My supply was depleted and I had to buy some. I didn’t realise that fresh lemon grass was that expense.
My family really enjoy this simple fried tofu with lemon grass dish. It has a nice combination of flavours and very aromatic with the fried garlic and lemon grass.
Ingredients
Serves 2
450g firm tofu
50g lemon grass, finely chopped
4 cloves garlic, finely chopped
1 teaspoon salt
1 chilli
1 teaspoon sugar
1 teaspoon turmeric
2 coriander sprigs for garnishing
Method
1. Drain tofu and slice into 4 rectangle pieces. Make two separate diagonal incisions halfway through the tofu pieces on one side.
2. In a bowl, add the lemon grass, chilli, salt, sugar and turmeric. Mix all the ingredients together.
3. Coat all sides of the tofu with the mixture. Stuff some of the lemon grass mixture into the diagonal cuts.
4. Heat a large frying pan with oil. Pan fry each side of the tofu until brown and crisp.
5. Garnish with coriander and serve with rice.
