Blueberry Tiramisu

Blueberries are packed with lots of nutrients. Every time blueberries are in season I tried to load Amy up with blueberry goodness. I usually like eating my blueberries fresh but decided to experiment with making a blueberry tiramisu this time. I love the traditional tiramisu but having seen so many different recipes using mangoes, strawberies, green tea and mixed berries that I was inspired to have my own take on a tiramisu.

First time making this so I thought it would be wise just to make only two servings. It was really quick and simple to make. It’s also kids friendly as there is no liquor. The result was a great summertime dessert. I love the sweet and sour taste of this dessert and the colours looks great too.

Blueberry Tiramisu 3

Ingredients

Serves 2

125g blueberries + extra for decorating
8 Savoiardi sponge fingers
2 tablespoons granulated sugar
1/2 lime juice
2 tablespoon water
75g mascarpone cheese
35g caster sugar
80 ml thickened cream

Method

Combine the mascarpone and caster sugar in a bowl. Using an electric mixer on low speed, gradually beat in the heavy cream.

Combined the blueberries, granulated sugar, lime juice and water in a small saucepan. Bring to a boil, stirring occasionally to dissolve the sugar. Reduce the heat and simmer, uncovered, until the blueberries give off their juices. Taste the sauce and adjust sugar and lime according to taste.

Cut the sponge fingers to fit the size of the base of the serving glass. Line the bottom of the glass with a layer of sponge fingers. Spoon blueberry sauce on the sponge fingers. Add a layer of mascarpone mixture over the blueberry sauce. Repeat the layers until reaches the top of the glass.

Decorate with blueberries. Cover and chill for 4 hours.
